The Woodfire Oven

Selecting the right oven is crucial to making a great wood fire pizza. Imported from Tuscany our Wood Fire Oven was hand crafted by the Valoriani family who have been making pizza ovens for more than 50 years. Constructed of crushed volcanic rock sourced from Mount Vesuvius, it certainly makes an impression on all who visit The Pizzeria.

When cooking in a wood fire oven there are three critical factors that need to work in harmony to make the perfect pizza, the heat in the floor of the oven, the heat of the dome and the size of the fire. The heat from the floor and dome cook the pizza whilst the flame from the fire browns the topping and finishes the cooking process. Although at times getting the right balance between the three can be a challenge, careful selection of the wood and position of the fire makes for perfect wood fire cooking.
